But what exactly have I done by moving the switch to manual and is it OK just to leave it on manual for a couple of weeks?

Manual is usually a position used when draining system, you probably have it working as it should be ie on auto, it won't hurt anything as long as it works it will be okay what make is it?.
 
House is warm now, water is hot, superb - thanks!

It's a "Danfoss". Noticed on one of the other sides it says "B" Hot Water and "A" Central Heating, with arrows pointing to both....kind of looks like there should be a lever (perhaps like the one that goes from Auto to Manual on the other side) to switch between the two.....

Anyway, very happy the heating AND water are now working.

I will keep it on manual for the next couple of weeks (hopefully it will keep going) then get the engineer to look at it when he replaces the boiler.
