Hi, how do I connect to 15mm copper? The left hand inlet is shallower with a flat base so I presume needs something with a fibre washer to seal, the right hand is deeper and think I've seen similar with a single ended nut that screws into the fitting and compresses the olive?? And PTFE/loctite55 on all threads?

Both ports are 1/2" BSP. If you are replacing one, then the fittings should be able to be re-used. If screwing into the inlet with a nipple, then a new fibre washer will be required. The outlet is usually connected with an internal compression nut.
 
Great thanks, internal compression nut - that's what I was visualising - can't find one at screwfix/toolstation etc but amazingly just managed to find one in my plumbing box. I'm converting to sealed system so nothing there previously.

The nipple in your third picture would be used on a pipe with a flared end and then a fibre washer would be used.

Use 2x 1/2"x 15mm compression irons with PTFE/Thread cord to seal.
