Got the task of painting 13 doors front and back. Started a test on the inside of 2 doors yesterday straight with the satin wood but as its quite thick it just felt a bit messy and took longer than id hoped.

Im wondering now if to get a better finish and make it quicker, should I thin it down a bit with white spirit?

Or should I go over them all with a primer or undercoat first which should go on easier and then finish off with a coat or satin?

Those white factory primed doors?
They can be very dry causing application problems.
I would not go on with a satin without something to seal.
I often used one coat of zinsser BIN in the morning then in the afternoon a coat of acrylic primer undercoat.
If they seem good and the factory primer isn't too dry then acrylic primer undercoat with a splash of water to help it.

If you want to speed up job take doors off. Lay down with 4 legs screwed to ends. Paint one side then flip over and paint the other.
Need space for that but you can crack on.

Also look at the satin paint application data sheet pdf online

Also. Don't use zinsser BIN on exterior doors

Sorry, should have said. These are solid wood doors. Currently had a rough sanding to key the surface (dont think there was any finish on them anyway)

So they are bare wood at the moment. Im just wondering if its best to put a wood undercoat on first and then my satin or if to just layer the satin straight off?

You need to read data sheet for that particular paint. It's a basic 5 minute read pdf which you will find interesting. Tells you everything you need to know. It's required bedtime reading. Ha.
Every building product I buy I always look at data sheet... No data sheet don't buy it..

No satin finish can be put on wood without an undercoat.
Apply acrylic primer undercoat 2 coats first. Give yourself a good white surface. You will need to denib ( make smooth) with 180 grade between undercoats as grain will lift a bit.
Then on with satin probably 2 coats so 4 in total..

If they are bare wood you must prime first

I would also follow with undercoat with acrylic or oil before finish coats

Primer , 2 undercoats and two satin etc should give you a nice finish

What do you think of multi surface primers in this regard ?

Multi surface primers are fine.
I've used Gardz. Bullseye123. Leyland primer undercoat. BIN aqua. Zinsser BIN. And many more.
All fine
