question about temp on the display of ecotec boiler

Hello,
I understand adjusting the round dials on the boiler sets the min and max temp of water or heating .

The min/max for water is 35C/65C .

Why is it that when i run my hot water the display reads 81C ? ( well it actually fluctuates between 86 and 75 with the burner cutting in/out but that's another problem - im getting it looked at - solved temporarily by having dial set to 12 oclock so it sits at 81C constantly when calling water, takes ages to reach 81C though)

So what is 81c ? surely not the temp of the water ?

And if you have any advise about my "problem" any comments welcome !! I can tell you more about that if anyone wants to know and has time.

The display is showing the temp of the water going around the inside of the boiler not the temp of the water you have coming out the tap, the boiler cutting out could be a partially blocked plate heat exchanger.
 
what does the + button do ? Sorry the manual is a load of s*te. When i press it when hot water is being called it reads 40C . Is this the temp of water coming out taps ?
