When removing silicone and resealing a bath. Do I need to also remove the bead that goes up with wall from the base of the bath and the corner of the room where the tiles meet?

Are you talking about the silicone that runs in the corner vertically up the tiles? Sometimes best to cut the first 500mm and renew so the transition is all the same new silicone.
Would really comes down to condition but TBH for all it is, it would be just as easy to do it all in a oner.

Looks clean enough to apply over the top - yes I'm that rough 
Just need to ensure the new will take to the old - use a solvent cleaner - IPA - Meths - White spirit etc before applying.
