im considering retiling my bathroom, what preparation will be required before i start, its currently tiled and obviously when i remove these tiles, the surface is unlikely to be smooth? whats the best way to deal with this? is it easiest to just apply more adhesive?

Depends what your walls are made of,and how well your tiles come off the wall.I think it would be better to try that first and then see what the situation is.If the walls are plasterboard,that might be the worst case scenario.I would see what happens first.
