You'll need to go to a specialist hardwood supplier. There should be some local to you. It's generally called "American red oak" here and the last time I bought any it was only available as "sawn boards" that is not just a sawn finish not planed. You'll most likely need someone to plane it to size for you. The supplier may be able to do that for you for an extra charge.
Size wise be aware that thickness wise you will end up with planed timber that is thinner than the nominal size of the sawn timber. So if the timber is 25mm thick, you will probably end up with just over 20mm thickness after planing. Same with the width you need to allow some waste to get the width you require.

Thank you Dave for the information about the wood maybe i should choose a different wood that will not require so much work on it before fitting and alot of wastage from it! Can you recommend a good quality hardwood for shelving?

I got White Oak from http://www.higgins.uk.com/ in Wellingborough for both shelves, kitchen work surface and bathroom flooring. Treated with three coats of Danish Oil it looks good and is water repellant.

You can reduce wastage by designing the shelve to use a standard thickness of timber instead of having it planed down to your chosen thickness.

White oak is what I'd have suggested too. Seems to be often more readily available here than the red oak, although the red oak certainly is a nice timber. I've only ever worked with red oak a couple of times when a client has particularly wanted it.
If possible, whatever timber and supplier you use, have a look at the timber you will be getting. If you are having them machine it then make it clear the sizes of widths / lengths you want, and what you want it for. You may again find it cheaper to go slightly under 150mm as long as they all finish the same. Again as Bernard says either accept the thicknesses that have or accept that there must be some reduction in thickness when planing, rather than insisting on a particular exact size.

Thank you Bernard and Dave i think it will be the best option to use White Oak finished with Danish Oil, interesting information you have both gave me on the wood's and will make sure that i stipulate on what it is being used for and get it just right! I will certainly go and visit Higgins Bernard and see what they can do for me and hopefully will be able to get a lovely set of Pantry Shelves!!!
Thank you again both of you, learnt abit about the best wood to use!! ☺
