Remodel extended 60s semi

Hello,

I have purchased a extended 1960s semi and would like to remodel the ground floor (dining room, kitchen, utility and workshop).

Here is the current ground floor plan:

The rear of the dining room, utility room, workshop, garage and store are extensions.
The dining room extension sits under a pitched roof. the rest under flat roofs.

I can get to this stage without any structural changes:

Does anyone know if it would be viable to do something like this:

Most things are possible with a big enough budget. It doesn't look unrealistic, some steel beams to pick up the walls above.
What is the construction of the garage? What about the roof of the workshop/store? As they'll be internal rooms within the house, their insulation properties probably need to be greatly improved.

You will obviously need a structural engineers input.
