Your suggestion is the most common method but just make sure you fit a vent to allow air circulation within the flue.
Or less permanent solution; frame out the opening, cover with plasterboard & plaster over but you need to take measures to avoid cracking around where the original opening was; same applies to render/plaster over block work.
You should vent in the bottom & fit a rain cap to the pot or you could have condensation/damp problems.
