My plan is to remove my entire chimney

The chimney stack is being taken down to below the internal roof height

Now in order to remove the Chimney breasts does one simply need to use their SDS drill and chisel away the bricks?

Is it likely that some bricks will be toothed in? If so, how do you deal with this?

The specs on my SDS are 780w and 2.4j of impact energy

Is this good enough? Or will i need better/additional tools?

Depends how strong the bricks and mortar are, but you may well need a bigger breaker.
Keyed in bricks can be knocked off flush with the bolster
