Removing grout and re-grouting

Whats the best tool to use to remove old grout and add new?

How do you prevent mould on grout, is their a grout thats really good to use to stop this or is it just a case of cleaning and drying the area after use??

You can buy grout removing tools, serated blade. mind you dont chip the tiles
Waterproof grout dosnt go mouldy.
