Repairs to old plaster work

I am renovating a victorian flat, so have taken down some stud walls etc.

I have some really old and large ornate coving around the main lounge and it has been damaged in parts.

I cannot repair like for like, but i will need to fill in the knocked out chunks of plaster with something.

What do i use ? I have infilled with some bonding on one section and it looks ok.

Is there a specific product i am better off using ?

In the photo you might be able to see some damage in the top left corner.
