Replacing double oven with single oven

We are trying to replace our double oven with a single oven.
Having had a look at the back the double oven is hard wired (thick black cable). There is a single switch that controls both the oven and the gas hob (ignition).
The new single oven has a three pin plug and there is a socket (currently not in use) on the wall behind the oven as well.

If I take off the hard wired cable,

1. Would it be safe to tape it up and leave it as it is?
2. Would it affect the hob ignition in any way?

Personally I would cut through the cable and add a single socket to the end of it. Then plug the new oven in there. That way there's no loose wiring flapping about (very dangerous!) and the oven is controlled by the cooker switch.
