Replacing lath/plaster ceiling with plasterboard

I'm doing a complete refurb of my shower room, starting from the top down. The room's got a lath/plaster celiing which I want to replace with plasterboard. If the ceiling was a regular shape, I wouldn't be asking this question but as the room is on the side of the house, the ceiling is flat and then slopes down where the roof joists(?) take over. Question is if I just put two bits of plasterboard up, one for the flat bit, one for the sloping bit what can I do where they join ? The angle is probably about 120 degrees.
