replacing toilet

Hello, have been having fun playing with replacing our bathroom which Im enjoying.
However, I removed the old loo and have set up the new one ready to install, water input looks easy enough, but waste. . . .
I have a new white plastic waste pipe.
The old one sticks up out of the downstairs concrete floor.
Do I pull the old white one out and fit new toilet with new waste pipe.
Bit concerned as I cant really see or imagine what it will be like when ive pulled the old pipe out. What will be there???
Is there another way or something else I should be doing???
