I am trying to add a new p-trap for kitchen waste but the house foundation is in the way.

I want to get close to the wall and as low as (if not a bit lower than the old path).

Can I do something like the following and carefully break off 2-3 inches of the foundation to get the gully in tight to the wall?

As you can see alternative traps don't help they come up too high...

surely that is already a trap in the ground?

I cant see that concrete being the foundation to be honest, it's not very deep and the fact the waste pipe disappears into it also would suggest it was a later addition. Break enough out to allow the gully to be positioned as per your top photo. Remove the existing clayware P trap and connect onto the outlet from that if using the Bottle gulley. Will also help get the level lower.
