Replastering a Chimney Breast

I've recently bought a new fireplace and am ready to fix the surround to the chimney breast. The problem is that the wall is curved and the surround will not lie flat against it. The wall is just plaster which has been painted over.

Can I plaster straight on top of this to achieve a straight flat surface?
