Repointing. Mortar type

I have a house which I expect to be 1920's, the walls are cavity walls.

I will need to repoint the chimney this winter and will be repointing the whole house in the summer.

My question is how do I know whether or not to use lime?

What ratio would you suggest for the mortar mix?

Also are the mortar guns any good?
