Rubber washer seal fittings

Never had to replace them so not sure where you would get the rubber ones as they are quite specific as to their inner and outer sizes, a standard 1/2" rubber washer doesn't quite fit if I remember rightly.

Would these be suitable?

Normally you have a 15 mm iso on your copper pie then fit these to the downstream side of the iso and screw your flexi on the them .

Always buy reputable ISO valves if you can, never used these ones so couldn't comment on how well they would last. What you fitted is the better option, coupled with good quality ISO's. Either those or use these into the ISO valves.

The shower hose washers usually don't fit, I've tried them before, well when I say they don't fit, the ones for showers hoses I've tried don't but they seem to change all the time.

No difference really the ones I posted a link to are available from toolstation and screwfix. So easy and fast to get.
