Sealing solid oak work tops.

I have some solid oak work tops to go in to my new kitchen. They are from Ikea and have had one factory applied treatment of oil. I was wondering if if would work to apply a Matt finish polyurethane lacquer/varnish instead of oil ? Would this last longer and still be moisture and heat resistant? Just a thought as oiling needs doing every 6 months or son and wondered if this would work. Any thoughts? Cheers chris
 
Its not difficult to oil. Just do it before you go to bed, come down in the morning & it looks great.
If you use varnish, you would need to rub down & reapply.
