Series of Roofs

Hi all
Am at the very early stages of a project in a new house. Essentially we have just moved in to a Victorian house that has two outbuildings. (a garage and a long shed/storage room both of Victorian brick in good nick) The house and the two buildings form 3 sides of a 4.5m by 6m courtyard/patio. What I want to do is roof that patio but am worried about having a series of roofs leading to leaks and problems with snow in winter. Looking at the house the aspect goes from A__A to AAA. Is this crazy?
Would really like to have the Victorian redbrick of the outbuildings be the walls of a glass roof or orangery type dining room. We plan to convert the long shed to a playroom and insulate the walls floor and roof. Maybe do something on the garage.

Any thoughts?

Any tips as to the sort of designer I need an architect?
