I have removed all the old cracked ceiling plaster and am ready to put up new plasterboard, should i remove the old laths as well or board over them, they are all in good order and level. Thanks in advance

As long as they're nice and flat, and all the bits of plaster have been removed from between them,, no problem to board over. Use plenty of screws.
