Sistering joists for a level floor - what size timber to use?

Hello all,

I'm currently in the process of replacing the subfloor in our house, taking the opportunity add insulation whilst it's up. Having reached the bedroom I've noticed the floor joists run out by up to 20mm. This does not bode well with my OCD. Not wanting to try and use a levelling screed I've decided to sister some new timber onto the existing joists.

The joists are 75x225x3300mm (3x9")

What size C16 timber should I use? Is there a rule of thumb?

Should I sister on both sides of a joist where possible or just one side?
