I'm building a fireplace/hearth using 30cm slate tiles. I have cemented them to the base no problem but now I want to put them on the walls on the inside of the chimney breast. Can I fix them to the wall using mortar of should I be using an adhesive?

There is nothing wrong with using mortar as long as you can hold them in place until it has set.

I would, however give thought to using no nails or silicone or something similar for a quicker and tidier job.

Unless of course it is going to be a working fire place. Those inside the fire place will need to be fixed with fire cement and those on the wall solidly with mortar.
