I'm getting quartz worktops and fittijh a Brita integrated tap. It'll be one large single sit-on sink.

Is it better to fit the tap to a hole in the quartz (behind sink) or directly to the sink itself via a taphole?

Will one be easier to deal with if the tap needs refitting? Or to change filters? For example if the tap is behind the bowl, is the filter cartiridge harder to reach?

Buy the tap first and work out where best to site it. Could be to one side rather than behind the bowl.
