My bath panel is entirely tiled-in, without any way to get at the taps without removing at least half the ceramic tiles. I have a few replacement tiles, but are there any hints for removing the tiles without them shattering?

Hit or a miss, .... You'll probably have to break one or two in the first place anyway to get in about them. Try removing the grout from the joints and gently slide a thin scraper or something behind the tile and see what happens. You might just get lucky.
