Hi, I'm considering replacing the carpet in our bathroom with ceramic floor tiles, the floor is currently standard "30's semi" floorboards. I'm guessing that I could lay 12mm WPB ply over the boards and tile to that, but I'd like to minimize the step from the landing to the bathroom. Can I remove the boards and replace with heavier WBP ply (or some other "engineered" board)?

You certainly can. Use 25mm WBP.
