im goin to b hanging a pair of flb timber garage doors
and frame
what would be the best joint to use on the frame?

I normall use a 1/4 of the width iof the frame with a lap joint as the top bar doesn't do anything but it will stop the side frame pulling inwards.

just notch the head and slip the leg in to it yea?

Yes, or you can do a full half lap if you want to

The other type similar to mortise & tenon is a bridle joint
