I now have a gas cooker in the kitchen I have renovated and don't really need the cooker switch! Can I simply wire in a double socket instead?

Much depends on what is there already. A cooker circuit will have been installed with at least a 6mm cable and on a 40A + fuse/cb (normally, though yours could be different!). If it's a 10mm cable it may take some arranging to get into socket terminals and I would like to see the fuse/cb replaced with one more suited to its new role. It's location might be a problem as well. It's in a kitchen so is notifiable.

Or if it is just a cosmetic thing you could just insulate the cable & fit a blanking plate. Does your cooker switch not have a built in socket? Thats another possibilty.
