Yes you should seal stone tiles.
I generally use "Fila" stone sealers.
The one you use would be dependant on what effects you want when finished.
Some offer enhancement of colours/tones, others a matt, clear or satin finish.
I would suggest seal prior to grouting, then again after grouting.
