I have recently replaced the diverter valve and automatic air release. Also cleaned out a lot of black bits out of the heat exchanger.

i'm not a Plummer just DIY

Before the changes the central heating light stayed on when the hot water was run. This is still the case, is that ok or is it a problem

Yeah that's normal. Just means that there's heating demand at the same time as you're running the water.

Was just a little concerned as the Central heating used to turn off when I ran hot water and the book does say hot water overrides CH
