Is there any product anyone out there knows of that would make an MDF countertop impervious to water? Can't afford to re-veneer, looking for a cheap and easy solution. Fingers crossed...

melbel, mdf is not suited to water unless it has been treated in manufacture.

Any plastic coated surfaces added to make up mdf vanity units will swell and break the surface once water gets in to it and I am guessing this is your problem?
If you are just looking at a temporary repair, then you will still need to use a paint that will stand a bit of wet now and then. If you can find it, use' Zinsser cover stain' after sanding down first, followed by an oil based undercoat and then an oil gloss. This will only work for a while as I think damage has already been done.
My only thought is, that with the price of paint today, a litre of Zinsser and u/c and Gloss is going to cost you as much as £30. How much is a new top for the vanity unit?
