How can I find out about the quality of a walnut worktop when only seeing it online. I have heard that the lighter staves are of poorer quality. I do not want to pay top ££. Any suggested companies.

Yes the lighter strips are the sapwood, this is not measured as a defect in the American grading system but can look unsightly.
Short answer is to go and have a look but almost all of the staved worktops will have sapwood to some degree, the only way to avoid it is to have custom tops made from wide (150mm) full length boards with no sap wood showing but they cost considerably more. This counter top, window board and mirror were all made from walnut and all sapwood cut out, not that ther ewas much on the sawn boards before I started.
