What do you cover a plasterboard ceiling with?

I live in an old house which the top bedroom is a loft conversion.

I want to insulate for the winter and noticed that the insulation between the roof and the ceiling in rubbish.

The ceiling is all cracked and looks horrible so i thought about ripping the old ceiling down, insulating and putting a new ceiling up.

I've read online that you can use plasterboard and my father-in-law can help put it up but what i want to know is about finishing it. Once it's all up, does it need to be plastered on top or is there something else you cover the plasterboard with? It's going to be painted white again but would like to know if it needs to be plastered which could cost more money or if there's something else you cover it with whcih is easier and cheaper.
 
You can get plasterboard where you only have to fill and sand the joints but skimming will probably give a better finish
