What is the surface used in countryside style carparks?

I think you are thinking of BREEDON GRAVEL. Its The self binding, yellowish, fine grit gravel used at national trust locations and parks, stately homes etc.

Its the best you can get, and not cheap!

Have a look at a sample at the suppliers before you order tons of it.
 
Breedon Gravel is not 'exactly the same stuff' as standard crusher run limestone or scalpings
 
Hoggin is a natural material: dig and use. Plenty in Essex but not sure how far the deposits extend.

Limestone scalpings are generally much like type 1 but with excess fines.

Type 1 is a grading not a specific material: limestone is the traditional rock, but you will also see granite, recycled concrete or hardcore (excelent stuff). I've also seen recycled rail ballast and in Kent years ago we used a lot of blast furnace slag from Dunquerque.
