What kind of flooring tiles?

I would like to have a flagstone-type flooring in my kitchen which is currently floorboards. I understand about laying down the ply but any recommendations about what type of flags to put down? Any suggestions about thickness, make greatly appreciated.
 
A porcelain tile with a riven surface or natural stone like slate will give a flagstone look.
