What pipes should I use?

I am renovating an old cottage attached to my house. I am going to supply water by tapping off the existing supplies (no problem) but I am a complete plumbing novice and don't know what to use to continue the supply around the renovation.
Should I use PB, PEX or copper? I need to go around corners and through / between joists, etc.
 
Definately not lead.

Its up to you whether you use copper or plastic.

Some installers swear by each, others have no preference.

Plastic has the flexibility advantage of fitting it through awkward areas.

The choice is yours.
