what size splashback?

I am going to paint the wall space between the worktops and cupbards and not tile. The question is should a stainless steel splashback fill the width between my wall units between above the hob, or should it be narrower and align with the hob and extractor, thus having a slim painted area down each edge?

As wide as possible, grease does not clean off walls very easily.
