What's going on with these steels / cut roof

Thanks - that makes sense. I thought perhaps there was something more formulaic to it that I wasn't appreciating. I'm considering a new self build extension that's not a million miles away from this kind of design, so I'm sure I'll be keeping you amused with many similar silly questions over the next few months!
 
That's building, and that's where experience comes into it.

However, you would still need some sort of structure in place (whether that be roof or masonry) to restrain the steels. The last thing you want is a heavy steel beam swaying about atop a couple of 4" x 2"s. :D

As soon as you take the weight of the steel on a prop, the first thing it does is start to sway, so you need something in place to counter this.
