I am planning on screwing 8' x 4' plywood sheets onto wooden joists to create a subfloor.

What's the thinnest plywood allowable for a subfloor?

How do the joist centres influence this ?

You are bang on - the joist centres and your proposed loading will all factor in thickness - I prefer to use 19mm ply, but you can get away with 12m
