I seem to remember they work by a bi-metallic strip causing a little hinged piece to swing down from the detector when it operates.

There is a small bulb containing mercury on the back of the hinged part which makes the circuit and sounds the alarm.
 
It's an old mains fire alarm heat detector.

Part of an old three wire system thats in desperate need of upgrading then! Must admit i've never seen a heat for one before, normally manual call points only

Saw an ingenious modification to add smokes in an archive room to a 3 wire 240v factory system once though... domestic detectors and a relay base :lol:
 
I've only ever seen one in the flesh in a school boiler room, which has since been upgraded to a monitored fire alarm.
