My mum ( bless er!) has has a new pine/ glazed internal door fitted.

She is convinced that it should be finished with 'wood oil' as that is what her friend told her.

What are my options with oil or varnish. If I used oil ( what sort?) and will it need further sanding down/re-coats.

I would go for a clear matt varnish myself!

sounds like your mums friend could be thinking of linseed oil or possibly danish oil. linseed oil is used to stop cricket bats splitting and is good for outdoor furniture.
danish oil contains nut oils and dryers it will penetrate the timber and dry non tacky so wont collect dust unlike linseed oil which will feel greasy , the idea behind danish oil is that its easy to apply with a rag or brush and leaves a pleasing natural finish you can also varnish over it later .
you could even briwax the door for a natural finish .
