Which undercoat plaster

I'm slowly doing some renovation works on my own house, currently hall stairs and landing, The hall which is quite small needs a new ceiling so i'm going to board and skim it, i've also removed all the plaster on the walls (well most of it fell off) The wall areas are only quite small, 5 doorways leading off hall, its a vitorian cottage built 1860, should i use sand and cement mix as undercoat, or would browning be ok. The walls are built with lime mortar and i presume the original plaster would of had lime content, do i need to replace it with anything lime based Thanks for any help
