Why is a sealed HW/CH system pressurised?

You don't really need any more pressure than that required to raise the water to the highest point, but if the system is sealed, how are going to figure out what that is exactly? And why would you bother trying to determine that pressure for each installation? 10 meters is 1 bar, so run it at 1.5 bar and most places will be covered.

I guess that's the answer. The boiler manuals I've seen (admittedly very few) say 'pressurise to between x-bar and y-bar', but don't mention why or explain that the highest/lowest parts of the system determine the optimum pressure.
