im thinking of fitting a wire free digistat to replace a conventional wired stat and timer on an open vented system ,am i right in thinking i would also need to fit a timer to control the hot water on/off times or can this be set on the digistat?

Yes, you are correct. However, you could save money by using your existing timer for the hot water. Just install near the hot water cylinder - that's usually where the wiring centre, pump and motorized valve are to be found. After all, how often do you need to change the HW heating times?

That said, Danfoss do make a Wireless Control Pack for heating and hot water.
