Wiring new cooker hood to a fused spur

Ideally a task I would do myself.
I need to wire in a new cooker hood into a fused spur in the nearby cupboard.
The hood is attached to a moulded plug.
After isolating yhe circuit Can I just cut the moulded plug off strip back the wires and connect it?
The current hood is wired in like in this picture. Just follow the same connections? Am i overthinking it??

Yes, but bear in mind it can invalidate the warranty. Make sure the correct fuse is installed too.

If it was me, I would replace the Fcu with a 13amp socket and go from there.

Do add some earth sleeving while your at it.
