I can't help noticing that it's actually below the level of the top of the cylinder which makes me wonder how much use it really is.

I noticed that. There also seems to be an air separator to the right of the pump, but unfortunately it is obscured by the slatted shelving (hint ).

Some people are never satisfied

Pipe out of top of cylinder:

Goes up to vent over cold water tank and down is to hot taps. The unpainted copper pipe tees off and goes back into loft to feed two power showers.

I think that lifting the vent pipe cured it. Famous last words o'course but it was a cold morning this morning and it was fine. The usual creaks and knocks but no bubbling water.
