Can I plaster over a plastic pipe and a plastic push fitting (equal T). I will cover it in Hemp Sleeving beforehand. Or does the plaster get into the inner workings of the pushfit connector and muck it up? What's best practice?

Don't have it in the wall at all.
Fittings like this should be accessible.
Why have you a t fitting buried in the wall anyway whats it supplying ?
I wouldn't.
When the fitting is at pressure the pipe moves out slightly if the plaster is hard against the grab ring pipe may just pop straight out.

Pushfit fittings should not be covered over in plaster. The o ring needs to be energised for them to seal and that can involve a small amount of movement in the pipes.
If the pipes can't move the fraction required, you run the risk of a leak.

Indeed, many newbuilds do have plastic pipe in the wall but NEVER put the fitting in the wall.....The fittings must be accessible
