But then they wouldn't be able to push it on for an extra hour and I don't have a problem with that. My problem is that on one day we open at lunchtime and I am finding that people are setting the extisting timer to come on every day at 11.00 am and sometimes running it until our normal closing time. Plus some days we do early doors and that gets tampered with as well.
Are there any timers with a master code ?
there are some timers with a push-button to give an hour's boost without changing the timer settings. Maybe a remote boost button could be wired that was accessible to the building's users?
My village hall has a timer for the kitchen water heater like that, it just has a button that gives something like 30 mins, 60 mins, 90 mins, and always switches off at the end of that time, so it is impossible to leave it running for long periods unattended.

Yes, I have three in the house like that. Two for underfloor heating and one for HW. All my timers have always had the extra hour facility. But that is not the issue here. I want to be able to set on/off times at least twice per day and to be able to do it for 7 individual days. On my timers I can have them working 5+2 or 7 individual days. I want the latter but the ability to be able to set a master code so that no one can change the times without entering the code.
But surely this must be a common situation ? People playing with timers when they shouldn't. My question still remains. Is there a timer with a digital locking mechanism ?
You want a programable timer with a four digit code that disables only the timer functions and not the 1 hour boost function?
Hardly think one would exist off the shelf.
Quite possible one is available that disables all functions.
But what use is that too you?
Fairly easy to mount the timer in an electrical panel with a lockable latch. Fit a timer relay with push button on the panel door, timed for the one hour boost.
Job done.

I'm not bothered about it disabling the 1 hour option. They can't do much harm by pressing that. But they can cost us serious money if they alter the timing to, as an example, be on all day and night !! It has happened. And the place is not attended after closing time until we open up the next evening. If someone altered the timing the night before it has been on for nearly 24 hours wasting fuel.
I wonder if you could put it in the locked cabinet, with a button on the outside that pressed the override/boost button?

Either you want the members to have access to the 1 hour boost or you don't?

If no access then follow the earlier advice and lock the timer in a cabinet or fit an automation progammable module which can be pass word protected..

yes there are a few I can think if, but they are commercial ones, and not cheap.
but since you seem to want it for a commercial property then It may be better in the long run to upgrade your controls
Is the system zoned at the moment?
