Insulating a Single skin external wall

Hi guys.

I have a single skin external wall backing my stove builders opening.

I'm getting a fair bit of condensation. Can I insulate it externally?

Would it be as easy as battening it, Rockwool, then cladding with some flashing on the top edge? (I'm no pro, correct me if I'm wrong!)

Basically you are on the right track. You probably want to include a breather membrane backing before fixing the cladding.
 
Awesome thank you. Regarding the top edge that I'd be flashing, would it be acceptable to simply attach a piece of treated timber at the desired angle for the water to then run down the flashing?

Fine. Make yourself an overhanging drip though so it casts the water away from the cladded wall. Look at mimicking something like a plastic door sill then dress your lead over this.
